preamble but it's a funny one at least.
i made an incredible mistake. our car had done problems and we couldn't go to the grocery store. so i ordered groceries through doordash, which i kind of hate doing but uuuuughhh i was almost out of milk and cheese and i'm the opposite of lactose intolerant and i die if i don't consume hilarious amounts of dairy
so as i was ordering my doordash groceries i thought nothing of the slightly higher than usual price of the eggs i put into my cart. because ordering groceries on doordash is, once again, bullshit, everything's gonna be
stupid expensive. a family pack is one of those 18 egg packs, right? and of course it's like $1.50 more than it otherwise would be because everything on doordash is at least $1.50 more expensive because people on food stamps can simply Get Fucked, am i right? hahaha. aaaaa capitalism is a nightmare
anyway it turns out that a family pack in this case was in fact
sixty (60) eggs which is (tapping on calculator) about 70% more eggs than i am used to having after a trip to the grocery store. secretly, i've always kind of wanted to buy one of those big-ass crates of eggs and i'd never had the courage. never had the tenacity. always chickened out (insert rimshot on very small drum set here). but here i was. with 60 fucking eggs at my disposal and no easy way to exchange them for the size i'd meant to buy. i had accidentally gifted myself with a very large blank canvas.
so i did what any reasonable person would do and made some quiche (after asking my bluesky followers OH GOD WHAT WOULD YOU DO WITH A LOT OF EGGS and being reminded that quiche exists)

Sausage & Spinach Quiche Born Of Beautiful Mistakes

Ingredients• pie crust (store-bought or one you made yourself. i used a winco one i happened to have around for other reasons. winco's store-brand pie crust slaps btw GOD i love winco)
• something greasy to keep the pie crust from sticking (i rubbed some crisco on my pan)
• pre-cooked frozen breakfast sausage, defrosted in the microwave enough to cut up into chunks
• a few fistfuls of spinach chopped into pieces
• a good chunk (like 1/2 cup?) cubed colby jack cheese. (i read in one of the recipes i was looking at that cubing is better than shredding because it creates warm pockets of melty cheese in the quiche)
• about 1/2 cup of chopped onion, browned on the stovetop in some butter
• 6 eggs
• 1 cup of milk
• garlic powder
• msg
• salt
• pepper
Directions• preheat the oven to 350.
• get your chopped onion frying on the stove and get your sausage defrosting in the microwave.
• while you wait for onions and sausage, grease your pie pan and slap that pie crust in there, cube the cheese, and chop the spinach.
• put the onions, sausage chunks, chopped spinach, and cubed cheese into the pan.
• measure out your milk and crack your eggs into it, then whip them all together with some MSG, salt, and pepper. (this is a "use your judgement" zone sorry i don't measure anything exactly when i season things lmao)
• pour the eggy mixture over everything.
• you might want to use some aluminum foil to cover just the crust and prevent it from burning.
• bake for 30-45 minutes, until the mixture doesn't slosh around when you move it anymore.
• let cool for 10 minutes before you slice.
• OAAUOGUGHGHGM QUICHEthis is a new recipe for me. the ones i've posted before now are pretty well road-tested and solidified. i'll probably continue to perfect this one. i think i'd like to use red onion next time (this time i used sweet onion) and i'd really like to try it with heavy cream. not to say that it didn't come out fantastic. it was REALLY good. the very mild sweetness of the premade winco pie crust really added something to it. i'm gonna make another one pretty soon because i need to use the other pie crust. it was divine. i looooooove quiche.
